MCQ on Carbohydrates with Answers

Carbohydrates MCQ with Answers:

What are Carbohydrates?

  • Carbohydrates are the general term for polyhydroxy aldehydes and polyhydroxy ketones and their derivatives.
  • Carbohydrates are also known as hydrates of carbon,
  • They are mainly composed of carbon, hydrogen, and oxygen.
  • Most carbohydrates come from plants. Grains, vegetables, fruits, and legumes (such as peas and fava beans) are the main sources.
  • Dairy products are the only foods that contain significant amounts of carbohydrates of animal origin.
  • There are three types of carbohydrates: sugars, starches, and fiber.
  • Carbohydrates in sugars and starches produce 4 calories per gram.
  • Fiber does not produce calories. It cannot be absorbed.

Classification of Carbohydrates

They are classified according to their degree of hydrolysis:

  • Monosaccharide: Refers to all sugars that cannot be hydrolyzed into smaller units, such as glucose, fructose, etc.;

  • Oligosaccharides: all sugar substances that can be hydrolyzed into a few (2-6) monosaccharide molecules, such as sucrose, lactose, maltose, etc.;

  • Polysaccharide: Any carbohydrate that can be hydrolyzed into multiple monosaccharide molecules, such as starch, cellulose, hemicellulose, pectin, etc.
  • According to the composition of polysaccharides:
  • Homopolysaccharide: refers to a polysaccharide composed of only one monosaccharide, such as starch, cellulose, etc.;
  • Heteropolysaccharide: refers to a polysaccharide composed of two or more monosaccharides, such as lentinan, etc.;

Functions of Carbohydrates

The main physiological functions of carbohydrates are:

  1. Important substances that constitute the body;
  2. Store and provide thermal energy;
  3. The energy necessary to maintain brain function;
  4. Regulate fat metabolism;
  5. Provide dietary fiber;
  6. Save protein;
  7. Anti-ketogenic effect;
  8. Detoxification;
  9. Enhance intestinal function;
